Due to other time committments, I did not put my 342 in the water at all last summer bang head

The summer before, we were out on it only a few times.  There is gas in the tank that has now been in the tank for two seasons with stabilizer.

What maintenance items should I have preformed before putting the boat in the water this Spring?

Have you added more stabilizer in the tank besides the initial amount?  Hopefully you have, that will help.  If not, I would think that is what you should first do.  Do you know how much is the tank?  My thought would be to monitor the fuel/water separators and just try to burn it out.  Maybe others would say to add more fuel, not sure what is right but to me if it runs ok with it, I'd just use it up.  I believe it loses octane over time, so maybe adding an octane boost?

BTW, I've heard that any stabilizer is only good for 2 years, that is, you can't keep a big container of it and just use it here and there.  Not saying you have, but I had a large container, since it is cheaper to buy that way, and just used it each year.
